What it is
A 210 mm double-bevel Japanese chef's knife with a European gyuto profile and an angled kiritsuke tip. Weighs about 400 g as listed by the shop. An all-purpose blade for meat, fish and vegetables.
Worth knowing
Japanese blades are harder and more brittle than German ones: no bones, no dishwasher, and it needs a board that is not glass or stone.
